"Eating healthy doesn’t mean eating expensive or hard-to-cook dishes," explained Barbara Gourley of Blanco. "In fact, it often means just eating easy, simple, colorful...and less." Gourley’s regular job is doing home care and therapy for Texas HealthCare Solutions in Blanco and nearby counties, but she said food is an important part of staying healthy or returning to good health after illness. She demonstrated for the Marvelously Matures group at First United Methodist Church in Johnson City by whipping up a quick meal of chicken and vegetables in a skillet, pot and wok. She likes the wok, she said, especially for small meals for one or two people, although Gourley was cooking for a couple of dozen in this case. "Food that’s stir-fried in the wok soaks up much less grease than deep-frying it, and when it comes to grease, less is healthier."
